What's for Dinner Weekend Addition~

Okay, forewarning...this week it may be all about the meals!  We have planned some super yummy dinners this week and I can't wait to share the with you all.

Sunday night's dinner...Kielbasa, Pepper, Onion and Potato Hash courtesy of The Two Bite Club.




Ingredients:

1 (14 oz) package turkey kielbasa, cut into 1/4 inch rounds (we used pork polish kielbasa, something my hubby  grew up with)
1 green bell pepper, diced
1/2 yellow, red or orange bell pepper, diced
1 onion, diced
3 small or 2 large potatoes, peeled and diced
olive oil
salt and pepper

Directions:

1.  In a heavy bottomed skillet, heat 2 TBS of olive oil over medium-high heat.  Add the potatoes to the skillet and season with salt and pepper.  Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning.
2. In a separate skillet, brown the sliced kielbasa for around 5 minutes in 1 TBS olive oil over medium-high heat.  Remove the kielbasa from the pan and set aside.  Add the peppers and onions to the skillet and season with a pinch of salt and pepper.  Cook for 5 minutes, or until softened, stirring occasionally.
3. Add the cooked potatoes and kielbasa to the skillet with the onions and peppers and mix everything together.  Serve nice and hot!!

Super simple and so delicious!!

And, tonight we are making Fried Chicken...the first time I have had fried chicken since going gluten free...the smell alone is intoxicating!

The kielbasa dish is such a great early fall recipe. I love good southern fried chicken, but it is not in my recipe repertoire - cant wait to see your glutton free version!

That fried chicken looks so darn good. The kielbasa dish looks good too but I know I would devour that chicken!
