First, let me apologize for the lack of posts. Where does the time go?
Since dropping baby girl off at the university, we have been working toward establishing a new routine back here at home. Part of which includes my teaching my little ones again on Wednesday mornings.
Yesterday was their first day. A few tears, but most subsided quickly once they saw all the great toys we had for them to play with. They loved listening to the Bible story, marching around the room playing instruments, crafting and music time with the "bigger" kids.
One was a bit of a handful. New baby at home, big sister just started Kindergarten...lots of changes. Hoping he settles down soon. We were exhausted by the end of our 3 hours with them!!!
As I mentioned in my last post, baby girl and I have gone gluten free. While at first we were a bit intimidated by the whole idea (especially me since I was also told to eliminate cow's dairy and peanuts as well), it is going quite well actually. The bonus is we both feel so much better already!!
So, I thought I would share one of my new favorite cookbooks. I have always been a fan of Cooking Light, and I was thrilled to see a Cooking Light Gluten Free cookbook at Barnes and Noble.
We have enjoyed several recipes already. Really not missing out on anything with these. And, the proof...hubby loves them too!!!
I love that most are also dairy free (or dairy free with a few adjustments). For instance, I used Buffalo mozzarella on the pizza. We also used Bob's Red Mill GF Pizza Dough mix, rather than the recipe for the crust they gave. We had used it before and it was delicious. Again, we didn't feel like we were losing out on taste at all with ANY of these recipes.

Being sensitive or allergic to gluten is a big deal.. and it's not easy to get used to eating this way. Thankfully there are lots of options out there as far as cookbooks and even flour that's already mixed.. gluten free.. so you don't have to combine all these different flours anymore! I am sensitive to gluten but can still eat it in moderation. The gluten free bread, muffins, and cookies I have on hand are delicious!

Glad you are feeling better with your new diet and not feeling deprived. That is defiantly the key to sticking with it and there are so many choices now for substitutions. Happy Friday :-)
ReplyDeleteI have been trying to do the same. Not because of an allergy, but because I think its better and easier to digest. Same with dairy. I'm not perfect at it, but trying. Can't wait to hear about your progress!
ReplyDeleteI have quite a few friends now who eat gluten free, and I'm also inspired by them. Not because I'm aware of any allergies or intolerance I have, but mainly because I want to eat healthier and incorporate changes in our lifestyle. ReplyDeleteGluten free sounds a little scary to me...but not as scary as the pre-schoolers! :) I am sure you get used to both after a while...and those recipes sound yummy! Have a great weekend!
ReplyDeleteThe recipes in your new book look so appetising. No wonder you don't feel like you are missing out on great flavours. I notice more gluten free symbols in restaurants too. I've just bought gluten free bread to try as I was curious about its taste and I'm always keen to eat healthy foods.

Good luck with your healthier lifestyle. I know that I need to cut back on grains which would in turn lead to less gluten.
